Lighter, Fluffy Old-Fashioned Pancakes Much better than store-bought pancake mix! Prep/Cook time: 10 minutes Makes: about 4, but depends on the size of the pancakes Ingredients: 2 tablespoons melted butter; 1 tablespoon normal sugar (healthier alternative: brown sugar); 1 1/4 cups of milk, nonfat; 2 egg whites; 1 1/2 cups of flour, all-purpose; 3 teaspoons of baking powder; and a pinch of salt Prep: Pour all of the above ingredients into a large bowl (in no particular order), and mix them thoroughly. Cook: Pour about 1/4 cup of this mixture into a pan to create each pancake. The fun part is, you can make any shape you want! My personal favorite though is Mickey Mouse, a true classic. Why this is a great breakfast option: It's fast, it's easy, and everyone loves pancakes. Also, this particular recipe has less calories and less sugar than most of the store-bought brands. And, it's homemade, and homemade things always taste better :)
