Hearty Breakfast Ideas

Bagel Breakfast Sandwich
A quick, easy way to eat a full breakfast
Prep time: 5 minutes
Cook time: 10-15 minutes
Ingredients: bagel (egg or plain recommended)**, two eggs, three strips of regular/turkey bacon (vegetarian alternative: Morning Star veggie bacon, which is actually quite good)
**This can also work with an English muffin, but in my opinion bagels are the much lighter, fluffier option that better compliments the other flavors in the sandwich.

Cook: First, pop a bagel (any flavor, though I recommend egg or plain), sliced in half into a toaster. Cook the bagel until it is lightly browned. Meanwhile, scramble two eggs. Then, cover the pan to keep the eggs hot. And last, fry the three slices of bacon in a pan, until crispy.

Assemble: spread the cooked eggs on the bottom half of the bagel, then lay the pieces of bacon on top. Then, put the top half of the bagel on top, and enjoy!

Daring suggestion! Spread a thin layer of cream cheese on the bottom half of the bagel before spreading the eggs on top.

Why this is a great breakfast option: The creamy eggs, savory bacon, and crunchy bagel makes for a satisfying combination. Also, this dish is high in protein.

Best served with fruit, to counter the "bad carbs" in the bagel.

Lighter, Fluffy Old-Fashioned Pancakes
Much better than store-bought pancake mix!
Prep/Cook time: 10 minutes
Makes: about 4, but depends on the size of the pancakes
Ingredients: 2 tablespoons melted butter; 1 tablespoon normal sugar (healthier alternative: brown sugar); 1 1/4 cups of milk, nonfat; 2 egg whites; 1 1/2 cups of flour, all-purpose; 3 teaspoons of baking powder; and a pinch of salt

Prep: Pour all of the above ingredients into a large bowl (in no particular order), and mix them thoroughly.

Cook: Pour about 1/4 cup of this mixture into a pan to create each pancake. The fun part is, you can make any shape you want! My personal favorite though is Mickey Mouse, a true classic.

Why this is a great breakfast option: It's fast, it's easy, and everyone loves pancakes. Also, this particular recipe has less calories and less sugar than most of the store-bought brands. And, it's homemade, and homemade things always taste better :)
