Nutritious, Creative, and Delicious Egg Dishes

I love eggs.

I eat scrambled eggs for breakfast every morning, but it gets tiring and boring to just have this simple dish every day. Yes, eggs that are scrambled or fried or hard boiled are quick and easy, but wouldn't exploring other, more creative egg dishes that are just as quick and easy be more exciting?

This has inspired me to do some searching for some healthy, delectable recipes involving eggs so that you can get the right start to your day. Below you will find fast, high-protein, and highly tasty options that I have discovered and am now in love with, and I hope you soon will be too!

Broccoli and Tomato Casserole
Feeds 6, Time: 50min
Ingredients:
-2 cups cubed bread crusts              -1 teaspoon onion powder
-1 cup broccoli florets                         -1 teaspoon garlic powder
-2 medium red tomatoes,                  -1 tablespoon chopped basil
​   thinly sliced                                            -2 ounces mozzarella
-1-2 tablespoons olive oil                 -a pinch of salt and pepper
-7 large eggs                                             -optional: for more protein, 
​-1 cup milk                                                    add some sausage


Directions:
1. Preheat oven to 350F.
2. Spray a casserole dish with cooking oil. Next, spread the bread crusts over the bottom, and then put the broccoli florets, tomato slices, cheese, and basil on top of the crusts. Now, drizzle the olive oil over it.
3. Take a new bowl, and in it mix the eggs, milk, onion powder, garlic powder, and the pinches of salt and pepper. Whisk until uniform, then pour  mixture into the casserole dish over the  veggies and crust.
4. After adding any additional cheese or  spices that you want on top, bake  casserole for 35-45 minutes. Then, enjoy!


Don't have the time for an elaborate recipe? Try a fried egg on top of avocado toast.


Flavorful, Healthy Breakfast Skillet
​Feeds 1, Time: 25-30min
Ingredients:
-1 thinly sliced sweet potato     -4 thinly sliced purple potatoes
-2 tablespoons olive oil                -4 eggs
-1/4 cup pesto                                   -1 cup kale
-2 tablespoons butter                   -1 teaspoon lemon juice
-optional: sliced tomato


​Directions:
1. Heat butter in a skillet, then add the sliced potatoes. Add a touch of water, then cover the skillet.
2. After 5 minutes, mix the potatoes. Then, mix in the pesto and kale. (Optional: add sliced tomato.)
3. Crack the eggs on top, and cover the skillet. Once the egg whites have solidified, after 5-10 minutes, turn off the heat.
4. Drizzle the olive oil on top, and squeeze on a bit of lemon juice. Now, it's ready to eat!

Egg Souffle in a Jar
Feeds 3, Time: 35-40min
Ingredients:
-6 eggs                                                         -garlic salt
-shredded mozzerella cheese       -black pepper
-optional: add your favorite           -1/3 cup milk
  vegetables!

Directions:
1. Preheat oven to 375F.
2. Mix together the eggs, milk, garlic salt, and black pepper in a bowl.
2. Spray 3 ramekins with cooking spray. Next, fill the bottom half with mozzerella cheese. Then, pour the egg mixture on top of the cheese.
3. Place the ramekins on a baking sheet and cook for 30 minutes. Enjoy!

Breakfast Cauliflower Pizza
(cauliflower pizza is my new favorite thing: HIGHLY recommend!)
Feeds 2, Time: 55min
Ingredients:
-6 cups packed cauliflower                        -a pinch of salt
-3/4 cups shredded cheddar cheese    -1 large egg white
​-1 teaspoon of garlic                                      -1/2 cup mushrooms
-a pinch of pepper                                            -1/4 cup sliced avocado
-1 teaspoon lemon juice                              -pesto (however much)
-3 large eggs


Directions:
1. Line a pan with parchment paper, and preheat oven to 400F
2. If the cauliflower does not have a rice-like texture, process it in a food processor. Then, microwave for 15 minutes, stirring occasionally.
3. Once the cauliflower cools, in order to make sure the crust won't be soggy pour the cauliflower into a kitchen towel and wring out the moisture.
4. Put the cauliflower into a bowl and add HALF of the cheddar cheese, the garlic, the pepper, and the salt. Stir, add the 1 large egg white, then stir again.
5. Spread and flatten the mixture onto the pan, and fold up the edges to create the crust. Bake for 20-25 minutes.
6. Before the pizza cools, spread on your desired amount of pesto, the second half of the cheddar cheese, the mushrooms (preferably  cooked), and crack the three eggs on  top. Put back in the oven until the eggs  are cooked the consistency you want  them. Sprinkle the lemon juice on top,  and let cool.

Egg Nests
Feeds 2, Time: 10min
Ingredients:
-2 eggs
-2 pinches of salt
-1/4 cup grated Parmesan cheese

Directions:
1. Preheat oven to 450F.
2. Separate the egg whites from the yolks. Add salt to the egg whites, then beat them until they form stiff peaks.
3. Fold the grated cheese into the egg whites.
4. Separate the egg whites into two different mounds on a baking sheet. Cook for 3 minutes. Then, put an egg yolk into the center of each mound. Cook for an additional 3 minutes. And, voil
á!
